António Muniz, head sushi chef at Four Seasons Hotel Ritz Lisbon, presents Live Sushi three days a week at theRitz Bar. With the event’s popularity on Thursdays and Fridays, Chef Muniz is
now adding Wednesdays to the calendar for local sushi lovers and Hotel guests alike.
“Sushi is the most well-known dish of traditional Japanese cuisine (Washoku), which has been placed as a UNESCO’s intangible cultural heritage list since last year. So I always proudly look forward to seeing the happy faces of my friends enjoying sushi when we have lunch at Four Seasons,” says Hiroshi Azuma, Ambassador to Japan in Portugal.
Chef Muniz started his career in sushi nine years ago, and is currently head sushiman at Four Seasons Hotel Ritz Lisbon. He began in a small restaurant in Cascais, a picturesque village 30 minutes by car from Lisbon by the Atlantic Ocean, where he discovered Japanese food to be his passion. Just two months into the job, the head sushiman quit, and Muniz was asked to step up and take the wheel, learning sushi on his own while at the helm.
Working with fusion sushi, he specialized in marrying oriental and occidental flavours, when, two years later, he joined the team at Aya, one of the biggest sushi references in Portugal. It was there that he let go of everything he knew and started his sushi training from scratch with the mentoring of sushiman Takashi Yoshitake San, the Japanese man that introduced sushi to Portugal, and created all his base of knowledge and perfected the craft he’s been practicing for the last two years at Four Seasons Hotel Ritz Lisbon.
Guests can now experience Chef Muniz’s Live Sushi three days a week at lunch and dinner at the Ritz Bar’s Sushi Lounge. It’s in this sushi lounge that guests will have the privilege of seeing, with their very own eyes, Chef Muniz creating, cutting, seasoning and presenting the result of his nine years of experience that climax in this gastronomical experience of transcending flavour, almost indescribable in its perfection.
The sashimi of salmon, tuna and sea bass are perfectly cut and displayed side by side in a spectacle of colour that proves that one can also eat with one’s eyes. The gunkans and urumakis, in their flavourful involvement between the spicy wasabi and the al dente rice, leave mouths watering and waiting to explore the next creation Chef Muniz decides to present to the senses, while a whole selection of traditional Japanese dishes that hide in the sushiman’s timid wisdom. It is truly an unmissable journey for any sushi enthusiast, as well as the sushi beginner.
Guests are invited to experience Live Sushi at the Sushi Lounge in the Ritz Bar, now also on Wednesdays, and to discover sushi in such an intimate and special way.
With the arrival of spring, Four Seasons Hotel Ritz Lisbon has yet another surprise in store. Guests can enjoy Lisbon’s fantastic weather as well as its best sushi on the Hotel’s fabulous terrace, with incredible views to Parque Eduardo VII.
